A Blissful Blondies Recipe from a Blondie Enthusiast
– 1 can chickpeas, rinsed and drained
– 1/2 cup all natural peanut butter OR almond butter
– 1/3 cup pure maple syrup
– Pinch of Himalayan salt
– 1/2 tsp baking powder
– 1/3 cup dark chocolate chips OR chopped chocolate chunks.
1. Preheat oven to 180˙C. Line a square cake tin with baking paper. In a food processor, add all ingredients except chocolate chips and process until batter is smooth. Fold in the chocolate chips.
2. Spread batter evenly in prepared pan then sprinkle some chocolate chips on top if desired. Bake for 20-25 minutes or until a skewer comes out clean. The batter may look underdone, but you don’t want them to dry out. Cool before turning out and cutting into squares.
